Picture the scene, the family are coming for dinner and you haven’t made a dessert. Time is running out and you need something quick and easy. Voila, Grandads really easy quick apple pie.

Let’s be honest, making good pastry is time-consuming. In this situation, shop-bought pastry is the answer.

Peel and slice the apples, sprinkle the spices and sugar, whisk an egg, top with shortcrust pastry, job done.

Ingredients

  • 3 Large cooking apples
  • 2 tbsp Honey
  • 1 pinch Cinnamon
  • 1 pinch Mixed Spice
  • 1 Egg beaten
  • 2 tbsp Water
  • 1 packet Ready Rolled Shortcrust Pastry
  • 1 tbsp Brown Sugar optional
  • Ice Cream or Crème Fraîche to serve

Instructions

  • Preheat the oven to 200℃/Fan 180℃/Gas 6.
  • Core the apples, then cut them into even-sized chunks so they all cook in the same amount of time.
  • Put the apple chunks into a pie dish, drizzle over the honey and sprinkle over the cinnamon and mixed spice.
  • Add the water to the pie dish.
  • Brush the edges of the pie dish with beaten egg.
  • Unroll the pastry and lay it over the top of the apple mixture overlapping the edges of the pie dish. Press the pastry edges onto the pie dish with a fork to create a seal.
  • Make a small cut in the centre of the pastry so that the air can escape during cooking, then brush with the remaining beaten egg.
  • If you like a bit of crunch on the pastry topping sprinkle over the brown sugar.
  • Bake the pie in the oven for 20-30 minutes until the pastry is golden and sandy in appearance and the apple filling is bubbling and hot.
  • Serve while still warm with crème fraîche, ice cream or natural yoghurt.
