Fresh blackberries or cherries when they are in season are a great accompaniment for duck. But out of season, my easy berry sauce recipe using berries from the freezer makes a great substitute.

It’s quick and easy, just some frozen berries, freshly squeezed orange juice and brown sugar. Takes about the same time as cooking duck breasts or you can make it in advance.

Just as an aside, I had some leftover easy berry sauce from dinner and tried it with ice cream. It was really good!

Easy Berry Sauce for Duck

Ingredients
  

  • 300 g Frozen Berry Mix blackberries, black and red currants are ideal
  • 1 tbsp Brown Sugar
  • 1 Large Orange juiced
  • Water as required

Instructions
 

  • Put the frozen berries and brown sugar into a small non-stick saucepan over a low heat stirring as the fruit thaws and the sugar melts, about 10 minutes.
  • Add the fresh orange juice and stir to combine. Bring to a slow simmer for about 5 minutes whisking occaisionally to break down the fruit.
  • If the sauce thickens too much add a small amount of water and warm through.

Notes

If you prefer a seedless smooth sauce rather like a coulis then pass the sauce through a sieve before serving.
