Papas arrugadas are the classic Canarian wrinkled potatoes.

Brought over by explorers to South America in the 1600s and cultivated in the Canary Islands ever since you are sure to have had them on holiday there.

Now you can try and make them at home. We don’t have quite the right potatoes like papa Bonita from Gran Canaria but any small variety should do.

Ingredients

  • 1.25 kg potato small
  • 2 tbsp sea salt coarse

Instructions

  • Wash any dirt off the potatoes and remove “eyes,” if any. Place the potatoes in a large pot and add water to just cover; add the salt.
  • Boil potatoes for 15 to 20 minutes until cooked.
  • Pour off the water and rest the potatoes on the stove on a very low heat until all water has evaporated and the potatoes are covered in a layer of sea salt.
  • Serve hot with red pepper sauce – mojo picon or cilantro green sauce – mojo cilantro on the side.
